現代夏布利的傳奇故事 — Domaine William Fevre

Domaine William Fevre 在夏布利 【Chablis】區域釀酒已有 250 年以上的歷史,第二次世界大之戰之後 William Fevre 父親,當時已是一名相當傑出的釀酒師, Domaine William Fevre 位於夏布利的核心中心區塊,Chablis 當地土壤為含有 Kimmeridgian 岩層石灰質黏土,底層土壤中富有大量礦石和牡蠣化石,不僅相當適合夏多內的生長,使得夏布利 Chablis 釀出的白酒散發出獨特迷人礦石風格!!

許多年以來,William Fevre 在 Chablis 這塊莊園上細心耕耘,想盡辦法讓當地優良的風土條件完全呈現在每年的釀酒作品上。在西元1998年香檳大廠漢諾家族 Henriot 正式買下接手 William Fevre,除了延續原本的釀酒精神,致力於突顯夏布利頂級產區細緻的特色。進一步捨棄過去高比例的新桶培養,改使用不銹鋼桶,強調 William Fevre 現在最為人稱道的純淨風味。酒莊進行改造,採用自然重力,擁有氣壓式榨汁與重力引流,盡可能降低葡萄在釀造時可能受到的耗損。除了改進釀造風格,栽種方面也採用有機農法,並將原先的燃燒式加熱器改為電熱式加熱器,以免燃燒的煙霧影響葡萄的風味。

酒莊將葡萄園劃分為80個區塊,分別進行管理照顧。採收後在低溫狀態進行短暫發酵培養。頂級園則約十五個月桶陳培養,新桶比例極低,僅約3%~5%。創造出經緻典雅最純淨的 Chablis 風格。也成為現代夏布利的代表風格。

William Fevre Chablis Cote Bouguerots Grand CruAllen Meadows – Burghound Tasting Notes: (from a 2 ha parcel at the bottom section of the vineyard (小小的2公頃); even so, the vineyard is so steep here that it must be worked entirely by hand as tractors would be dangerous to use). This is also completely classic and even more aromatically complex with a plethora of sea shore nuances to the cool green fruit scents. On the palate this is dense, powerful and quite serious with brooding flavors that brim with dry extract that buffers the firm acid spine on the intensely mineral-driven and explosively long finish. This is the biggest wine in the range yet impeccably well balanced (無可挑剔的完美平衡) and if not exactly refined, then certainly not rustic either. A ‘wow’ wine 哇!. 93-96 points Allen Meadows – Burghound

Robert Parker Tasting Notes: Veins of cool, vibrant minerality frame layers of expressive fruit in the 2011 Chablis Bougros Cote Bouguerots. This large-scaled, imposing wine is holding back much of its energy today. There is an implosive quality that is impossible to miss. The combination of fruit and intense minerality is highly appealing, even at this early stage. Anticipated maturity: 2013+.

This lovely William Fèvre Chablis Grand Cru Bougros Côte Bouguerots 2011 is one of the really great Chablis of the vintage. Showing a lovely floral nose with a palate of great complexity and concentration, this wine offers well-defined orchard and citrus fruits, with classic mineral notes, spice and myriad other notes. This wine derives from a prime south-facing five-acre parcel located at the bottom of the Bougros Côte de Bouguerots vineyard; offering a 30-degree grade that facilitates ideal drainage, this plot is so steep it topples tractors and must be worked entirely by hand. Aromatics of river rocks, white flowers and citrus are followed by a weighty palate that seconds those notes in a dense, satisfying, bone-dry wine that crescendos with a mineral-laden finish.

Côte Bouguerots Chablis Grand Cru 等級的酒款經過木桶熟成的比例較高,與其他等級的 Chablis酒款完全不同,喝來圓滑溫潤,充滿花朵和蜂蜜香,成熟而純淨的果香,鮮明集中的蘋果、柑橘、礦石等香氣,餘韻悠長且不失勁道;優雅的明亮酸度不失支撐起此酒稠密的酒體,帶有梔子花香的餘韻柔美悠長,呈現出華麗的格局與高雅的質感!
