創立於 1825 年的 Faiveley 是布根地 Nuits St Georges 最具代表性酒商 Negocient，但更像是一家的獨立自有酒莊。Faiveley 本業是生產法國高鐵 TGV 車門的大型企業，這樣的酒廠在布根地幾乎是獨一無二，以大企業的嚴謹管理，幾乎是不計成本來經營。Faiveley 擁有 120 公頃的葡萄園，主要集中在夜丘，自有地的比例高達 80%，相較於伯恩丘幾家著名的大型酒商，其自有地僅約十分之一。
Domaine Faiveley自1825年開始，延續七代一直由家族世襲經營。François Faiveley從1978年開始經營管理Faiveley酒廠以來，持續不斷努力生產偉大優良的葡萄酒，並致力改進葡萄酒生產的每一個層面。幾乎所有Faiveley的頂級酒及一級酒，均採用100%全新橡木桶，並以人工不過濾逐桶裝瓶，如此一來，酒質會變得更加澄淨且富有華麗感的酒體，得以展現Pinot Noir最佳的風味。Faiveley酒廠的葡萄酒集中度佳，口感豐富真是其他酒廠難以媲美的。François的兒子Erwan Faiveley於2005年接手，Erwan絕不是個低調的人，他開始投資並做了許多新的嘗試，花大錢為葡萄園作土質分析，然後據此決定如何平衡土壤的成份，現在的Faiveley僅採用有機肥料，而且將逐漸成為有機栽種 ,目前由第七代 Erwan Faiveley 經營，2004 年禮聘原 Bouchard Pere & Fils 釀酒總管 Regis Surrel 加入，改變原來需要時間柔化的嚴肅印象，創造出不同以往的Faiveley全新風格，年輕時展現出細膩誘人姿態，亦可陳年很久。為了控制葡萄的品質，酒莊大幅削減產量，包括以植草、除樹芽、保留老樹、選擇量產低的樹種等方法。釀造的部分自1985年開始，幾乎所有Faiveley 的頂級酒及一級酒，均採用100%全新橡木桶，以不過濾逐桶手工裝瓶！。

Domaine Faiveley【 Latricières-Chambertin Grand Cru 】2012Allen Meadows – Burghound Tasting Notes: Sweet Spot Outstanding A pure and manifestly earthy and sauvage nose offers up notes of red and dark currant, humus and underbrush. There is excellent volume and mid-palate density to the beautifully delineated medium weight plus flavors that possess terrific focus and plenty of minerality on the strikingly long finish. As is usually the case this is markedly austere at present and will need plenty of cellar time before it’s ready for prime time but it should be well worth the wait. Stephen Tanzer’s International Wine Cellar Tasting Notes: Good bright, dark red. Complex, high-pitched aromas of pomegranate, nutmeg, orange peel, licorice and pepper. Nuanced and stylish but youthfully tight, showing outstanding definition and lift its tart red berry and stone flavors. Finishes long and brisk, with outstanding energy. Domaine Faiveley Corton-Clos des Cortons Grand Cru 2011【Monopole】Allen Meadows – Burghound Tasting Notes: Don’t Miss!* As is usually the case with this wine when it’s young, the nose is restrained to the point of being almost mute though aggressive swirling liberates aromas of earth, spice, red currant and hints of the sauvage. And instead of the robust and well-muscled mid-palate there is an almost caressing mouth feel to the full-bodied yet refined flavors because while the supporting tannins are definitely firm and dense they are also quite finely-grained. There is excellent length to the moderately austere, tight, focused and linear finish that delivers outstanding persistence. (1/2013) 92-95 points Allen Meadows – Burghound
Vinous Tasting Notes: Faiveley’s 2011 Corton Clos des Corton is a fitting conclusion to this great night of wine and food. Intensely saline and pointed, the 2011 impresses for its pure energy and tension. The flavors are vibrant and impeccably delineated in a Burgundy that is all about finesse. Wine Enthusiast Tasting Notes: *Cellar Selection* Rounded and rich, it is full of dark fruits and red cherries that combine with firm tannins and great acidity.
