Domaine Christian Serafin 創立於1947年。現任莊主Christian Serafin 無論在葡萄園或是酒窖中都是一個極度偏執的要求完美主義者，投入一生全部心力只想把酒釀好。Robert Parker 多次給予其五顆星酒莊的高度評價!
Cristian對 於種植葡萄的理念是盡可能地以有機方式去耕種，產量要低，而且採用老葡萄樹。在預期產量豐盛的年份，酒莊會進行「綠色採收」。 發酵時，Christian不喜歡使用人工酵母。他會讓發酵溫度升高到35ºC，然後進行一段長時間的乳酸發酵。Christian 原本排斥使用新橡木桶，經多次討論朋友建議下，終於在西元1987年他首次嘗試使用新橡木桶，而且發現新橡木桶的確會帶給葡萄酒一些好處，比如說新橡木的味道會讓酸味比較和緩；因此他開始採用部分的新橡木桶，一般來說，Gevrey村莊級的酒會50%的新橡木桶，老藤(Vieilles Vignes)、一級葡萄園和 Charmes-Chambertin 特級葡萄園則用全新橡木桶。Serafin 的酒完全不經過過濾澄清。
Serafin 釀製的酒有其優雅的獨特風格。他們的Gevrey村莊酒有兩款：基本款是來自樹齡約二十年的葡萄樹，而另一款則是用平均樹齡約50~60年(有些葡萄樹栽種於1920年)的葡萄釀製的，兩者的年產量全部加總起來,一年的年產量也不過只有約2500箱,可說是一上市新年份就會訂走, Gevrey 村莊酒反映出 Gevrey 的細緻優雅，老藤釀的Gevrey酒質濃郁厚實，表現出良好的深度和複雜性，在好年份的時候比起一級葡萄園的酒也毫不遜色。 一級葡萄園Les Cazetiers，其土壤貧瘠，含有許多拳頭大的石灰岩。這裡釀出來的酒酸度較明顯，結構更強，卻有著和Gevrey村莊級比起來更有不一樣的個性與風格,這次2009年好年份.,可說是市場上僅有!

Tasting Note: The 2009 Morey St. Denis Millandes is fabulous. It boasts a great combination of rich, dark fruit and powerful structure. Today the wine is already starting to shut down, something that bodes quite well for the future. Mint, flowers, spices and licorice stain the palate on the deep, resonant finish. This is a brilliant showing from Christian Serafin. Anticipated maturity: 2017-2029

5555Tasting Note: The 2009 Gevrey-Chambertin Les Baudes is one of the more open, radiant wines in this lineup. There is an unabashed sexiness to the fruit that is quite beautiful. This shows superb intensity and juiciness all the way through to the round, finish. The Baudes comes from a parcel next to de Vogue’s vineyards in Bonnes Mares. Anticipated maturity: 2014-2029.
