Stephane Derenoncourt 生於法國北部邊界Dunkirk 城鎮，在西元1963年他他的父親對家庭充滿暴力行為，讓Stephane深感家庭破碎，在他13歲那年開始，就已離家出走，獨自在外過著顛沛流離的黑暗生活。最後幸運的是，遇上一位他心目中相當心儀女生，跟隨她去波爾多尋找新生活，展開他的人生轉捩點。他的釀酒最初就從波爾多右岸Canon Fronsac開始，也就是Chateau VRAI CANON BOUCHE，直到今天Stephane從他雙手釀出來的酒，已經有右岸Chateau La Mondotte，Chateau Canon La Gaffeliere和Chateau Talbot及 Domaine de Chevalier頂尖列級酒莊等，但在他心裡還是最掛念著Chateau VRAI CANON BOUCHE，那是他內心最得意的作品!為何這麼說呢?? 因為Stephane 待在波爾多右岸Canon Fronsac學習釀酒，一待便是數年。這段日子裡，他熟悉Canon Fronsac土壤特性及小型微氣候，深知如何提昇Merlot葡萄特質發揮，經過他的不懈努力，“一而再，再而三”地釀出出色的釀出精彩好酒來。可以說，這位釀酒奇才的努力付出絕非汪然，其努力付出一點都沒有白費。

【Robert ParkerTasting Notes】:One of the stars of Canon-Fronsac ( Canon-Fronsac明星之一), this 30-acre vineyard is making some great wine, and the 2009 appears to be the finest they have yet produced . (2009年應是他們釀製的最好年份作品!). The Dutch owners brought in Stephane Derenoncourt as consultant, and the 2009 (98% Merlot and 2% Malbec) tips the scales at 14.5% natural alcohol. Full-bodied with an inky/blue/purple color it represents the essence of blackberries, black raspberries, cassis, licorice, crushed rocks, and subtle oak. The high alcohol and all evidence of oak aging are completely buried under the sheer concentration (in this case coming from low yields of 20 hectoliters per hectare). A big time sleeper of the vintage, it should age effortlessly for 25-30 years. (Tasted two times.) (它毫不費力地可以陳年25-30年。（我品嚐試了兩次）
the Dutch owners had the foresight to bring in the most fashionable winemaking consultant of the moment, Stephane Derenoncourt. This blend of 95% Merlot, 3% Cabernet Franc and 2% Malbec hit 14.5% natural alcohol and was bottled unfined and unfiltered. Yields were a meager 20 hectoliters per hectare.(產量極小)
98% Merlot 和 2% Malbec，平均樹齡為35-40年。當葡萄達到理想的成熟狀態以後，人工方式進行採摘。採摘後的葡萄經過篩選、70%全新橡木桶陳年21個月，隨著陳年的時間的推移， 細膩迷人香氣，入口能感受到豐富甜美的單寧，如天鵝絨般絲滑，整體十分的優雅，且回味持久，有著烤麵包和香草的餘韻。
